Twelve local chefs have shared their cooking tips and recipes to help cut food waste for the next edition of the free Love Food Hate Waste calendar.
Local restaurants have contributed to Guernsey Waste’s annual calendar which can be picked up from most major supermarkets and some retailers across the island.
The chefs featured are from the Conservatory, Cooked, Copenhagen, the Imperial, La Fregate, La Reunion, Le Pommier, JB Parkers, Pier 17, Old Government House and The Rockmount.
A seasonal recipe accompanies each month as well as simple tips to cut food waste, such as: “Save the trimming from your veggies all week in a zip top bag in the fridge or freezer then use them to make your own tasty vegetable stock”.
It's estimated that over £10m worth of food is discarded in Guernsey annually – two thirds of which could have been consumed. The average family could save hundreds of pounds by reducing food waste.
If enough people waste less, demand on food decreases and prices fall in turn.

Guernsey Waste invited the media to Le Pommier Hotel and asked for leftover goods to be brought along so that Head Chef, Richard Wood (pictured top), and his team could whip up a dish on the spot.
The chefs immediately decided on a vegetable moussaka and a side of coleslaw after seeing the goods, which were mostly leftover seasonal and tinned vegetables.
“Coleslaw is as easy as finely grating some assorted veggies, adding mayo, salt and pepper and a bit of olive oil,” said Mr Wood. He used carrot, cabbage, and garden apples for the side dish.
The moussaka consisted of onion, cauliflower, tinned tomatoes, aubergine and various other root vegetables. The only other ingredients used were butter, milk, flour, and cheese for a bechamel sauce and some dried parsley.

Waste Prevention and Recycling Officer, Tina Norman-Ross said: “We asked our chefs to come up with a seasonal dish for a particular month, using fresh, local as well as general store cupboard ingredients. They have come up with a great mix of recipes which we hope will inspire islander’s meals, whether just cooking for the family or friends.
“We are particularly grateful to Richard Wood and his team at Le Pommier Hotel for allowing us to use the hotel’s kitchen for all the cooking and two-day photo shoot. This gave our chefs time and space to prepare and cook their dishes without all the distractions they would have in their normal kitchen.
“The Love Food Hate Waste calendar will hopefully be a reminder throughout next year to keep thinking about what ends up in the bin. It is a great way to get the message directly into island homes for a whole 12 months and highlight how a few small changes can save a lot of money.”
The free calendar can be picked up from Alliance, Checkers Capelles, the Co-op, Forest Stores, Iceland, M&S Food Halls, Morrisons, Waitrose and Aladdin’s Cave.
