Local chefs serve up a treat for 2022 food waste calendar

Chefs from 12 local restaurants are sharing some of their favourite dishes in an effort to help reduce the amount of food ending up in the bin.

They have teamed up with Guernsey Waste to produce the 2022 Love Food Hate Waste calendar, which islanders will be able to pick up for free from local supermarkets across the island.

It is estimated more than £10 million worth of food is currently thrown away in Guernsey each year. More than 3,000 tonnes is collected annually from local households, about two thirds of which could have been eaten. An average family could be wasting as much as £800 a year on food that ends up in the bin.

The restaurants supporting the initiative are from Balthazar, Conservatory at Moores, Cooked at St James, Crepe Maison, JB Parkers at Moores, Les Rocquettes, Mint Brasserie, OGH, Patois, Saltwater, The Hook and The Raw Store.

Each chef came up with a seasonal recipe, to provide tasty dishes for each month of the year. The calendar also includes simple, practical steps to help reduce food waste.

Waste prevention & recycling officer, Tina Norman-Ross said the calendar is a real Guernsey creation using local chefs, a local design company, a local photographer, a local printer as well as a lot of local ingredients.

“We asked our chefs to come up with a seasonal dish for a particular month, using fresh, local as well as general store cupboard ingredients. They have come up with a great mix of recipes which we hope will inspire islander’s meals, whether just cooking for the family or friends,” said Mrs Norman-Ross.

“We are particularly grateful to Sarnia Hotels for allowing us to use the hotel’s kitchen and the Rendezvous Bar for the cooking and two-day photo shoot. This gave our chefs time and space to prepare and cook their dishes without all the distractions they would have in their normal kitchen.”

Calum Le Noury, Operations Director of Sarnia Hotels, said it was a great initiative to be involved in.

“This is the third year that Sarnia Hotels has been involved with the production of the Love Food Hate Waste calendar. We were very happy to offer the use of our spacious working kitchen at Moores Hotel. It was a great couple of days and lovely to see all the chefs coming and going. I hope the recipes will give islanders some useful tips on how to avoid unnecessary food waste and at the same time provide them with some lovely new recipes to try out,” said Mr Le Noury.

Mrs Norman-Ross said the run up to Christmas was an important time to get the message across, given the emphasis on food and drink over the festive season. Guernsey Waste was also grateful for the support from supermarkets.

“We are in a really fortunate position of being able to look forward to the festive season as we would any other. As we get ready for Christmas, we are encouraging islanders to reduce their waste in general over the next few weeks in the lead up to the New Year.”

“The Love Food Hate Waste calendar will then hopefully be a reminder throughout next year to keep thinking about what ends up in the bin. It is a great way to get the Love Food Hate Waste message directly into island homes for a whole 12 months and highlight how a few small changes can save a lot of money.”
